Her is an answer by HG Shyamasundara Prabhu (ACBSP):

There is no yeast in it, it is just fermented by leaving in warm
area. No one added yeast to them as one does to make bread rise.?Idlis etc
are offered in very ancient temples in S India like Partha Sarthi in
Chennai. Jellabis, which Prabhupada taught us how to make, are also made
from fermented batter. It is not baker’s yeast.
?
You say that soy is new. In traditional temples like Jagannatha
puri, or Sri Rangam, Tirupati, etc they only follow traditional recipes that
have been handed down for centuries before Europeans came to India. You will
see no potatoes, tomatoes, peanuts, chillies, avocados etc. (Chillies come
from Africa) Does that mean we can not offer them to Krsna? No we can. SP
said Potatoe is the King of vegetables and ate all these items and offered
them to Krsna. So just because something is new doesn’t disqualify it.

When it comes to soybeans few people actually eat soybeans per se, they may
eat soy sprouts or things made from soy but not the beans themselves as they
would cause most people to have bad case of flatulence. Processed soy is
much easier to digest.

Regarding SP views on soy there are contradictions because he sanctioned
soybean in Mayapura for food distribution in 1970s and 80s, people would
take and bring home and give to cows because they were not used to them. But
we cooked in soy oil. The soy products we got from the UN food banks. Again
as I said before eating soybeans alone is not the healthiest thing to do.
?
We have to be careful how we apply the rules and not get carried away with
them. I have been to orthodox brahmins homes in S India, they are
archakas and they tell me staright that to the Deity they do not offer
potatoe because that is not the temple tradition but they eat at home and
offer to the home Deity. Same with other items such as paneer. That’s right
in some temples (Srirangam for example)?they do not offer paneer, but it is
an ISKCON staple.
